Spinach Breakfast Omelet and Berries – I came up with it this morning and liked it so I thought I should share with the world.  The recipe is a three block recipe.

  1. Heat up cast iron skillet and 1 tsp of oil on low.
  2. Throw in a tablespoon or so of minced Garlic and let it simmer until some of the garlic starts browning.
  3. Throw in two cups of raw Baby Spinach and cook until the garlic starts wilting.
  4. Remove garlic and spinach from the pan and place on your plate.
  5. Cook 4 – egg whites until they start to setup and then add the garlic and spinach to one side of the omelet.
  6. Fold the omelet over and cook until finished.

Eat the omelet with 1 cup of blueberries or 1.5 cups of mixed berries and .5 cup of a natural no sugar added salsa.  We buy a really well done salsa from Costco, I’ll post the name of later if someone requests it.

  • Oil – 3 blocks Fat
  • 4 egg whites – 3 blocks Protein
  • .5 cup salsa, 1 cup blueberries, 2 cups of raw spinach – 3 blocks Carb
